Banana and Oatmeal Cookies [Through My Lens Nr. 234]

When you are stuck home for a long time, eating healthy can be very hard. I find it for myself that when I'm out and about, go to the gym, have a full day of work, that I can stick to my diet much better. So now, with the corona virus crisis, and having to stay in I am flocking to the fridge much more. Because of that i have decided to fill my fridge up with delicious and healthy things to eat, so that when hunger (or boredom) strikes I will at least eat something nutritious. These banana and oatmeal cookies are not revolutionary (actually I had two bananas that were going to go bad, and I had to use them up, and thus I looked up a recipe online), but I did manage to make my own spin on them. These are actually banana, cocoa, coconut and almond cookies. And they are so good for you. You can find the recipe down below. I hope these will be of use to you and I also hope everyone is safe and healthy.


Banana and Oatmeal Cookies


Ingredients
  • 1 cup quick oats (see note)
  • 2 medium overripe bananas (mashed to a liquid-like consistency)
  • 2 tbsp cocoa powder, sifted
  • 4 tbsp coconut flakes
  • 1 tbsp milk (or more if the mixture gets to stiff)
    1/2 cup almonds, chopped
Instructions
  • Preheat oven to 180°C (350°F). Line a baking sheet with silicone baking mat or parchment paper.

  • In a large bowl, add oats and mashed bananas. Mix with a fork until it becomes an evenly mixed, thick batter. Add the rest of the ingredients.
  • Make round balls out of the cookie batter. Place onto baking sheet, spacing about 2 inches apart. Gently press down on each ball so that it flattens into a round disc. Cookies will not spread much during baking, so keep that in mind when shaping and flattening your discs.

  • Bake for about 15 minutes or until cookies are lightly brown and set. Cookie bottoms should also be brown and easily come off baking sheet. Let cookies cool before eating. Store uneaten cookies in the fridge.

  8. I used to make something similar and did it with my young elementary students. I loved reading the book "The Funny Thing" by Wanda Gag. It was about a dragon that ate dolls and made children very sad. A kindly man created a treat balls of various items and called Jum-jills to solve the problem.
